NACE July Meeting: Sauces – Things that make you go “YUM!”

What would a steak be without a Demi Glace Sauce?
What would Salmon be without a Beurre Blanc Sauce?
What would Eggs Benedict be without a Hollandaise Sauce?

Sauces are one of the fundamentals of cooking and the crowning glory of any dish. From the basic five “mother” sauces, there are literally hundreds of variations of sauces that are used to dress, complement, enhance and bring out the flavor of food. Know the basics and you’ll be able to prepare a multitude of recipes like a professional.

Learn all this and more as our distinguished panel of chefs educate us on the basics of the 5 Mother Sauces and their most common derivatives.

June Meeting Recap



Everyone at the June meeting had a "field day". Fantastic activities and games were enjoyed by all. The Boys and Girls Club of Greater Dallas scored big with both the donations from the members and at all the games. It was definitely a win - win situation for all.

June Meeting: Have a Ball with NACE

Remember field day when you were a kid and how much you looked forward to it? DFW NACE is recreating that experience for its members and guests by setting up some of the newest games and props in the event industry as well as serving fun food and beverages that will make you feel like a kid again!

Across the Generations

The March meeting was held at the beautifully redecorated Northwood Club in Dallas. The ballroom was elegantly transformed by Top Shelf Weddings & Events, Linen Hero, Bridal Blooms and Creations, Absolute Entertainment & Lighting, Fauxcades, and Quest Drape. The Club provided a delicious dinner, signature drinks, and a fabulous Dessert Lounge. JH Pro served as Master of Ceremonies.

The speaker for the evening was Eric Papp. Eric talked about the skills and personalities of four distinctively different generations that currently make up the work force. His insight into the Generation Y (Millennials) as both customers and employees was extremely informative.

Texas Star Awards Entry Information


This is a quick reminder that your chance to enter the most prestigious award program is approaching. As event professionals we all want recognition for the work we do. The Texas Star Awards gives you the opportunity to shine!

For The Texas Star Awards: Entries are to come in to the Texas Star committee, by Friday, February 26th, by 5 p.m. CST. With this deadline, the entry fee is $95 per entry. If more time is needed for your entry, a deadline date of Friday,March 5,2010 by 5 pm CST. is
available for the entry fee of $125.00 per entry.

This year's competition is open to events that have taken place between August 1, 2008 and December 31, 2009. Events that take place after December 31st may be entered in next year's competition. Awards are submitted electronically, as ISES Dallas Chapter is proud to be a green organization. The Awards categories are listed below, please check for more information at: www.texasstarawards.com.

We want to encourage you to enter your creme de la creme events in these competitions, and hope you will remember - You cannot win if you do not enter!
